Egglesscooking.com, the recipe site which specializes in egg-free baking, launches “never-seen-before” list of common egg substitutions for baking. The online graphic provides dozens of innovative swaps.

Researchers estimate that up to 15 million Americans have food allergies, including 5.9 million children under age 18. Egg allergies are among the most prevalent and can be difficult to manage, mostly because the natural binder can be found in a wide range of foods.

It’s often used in pre-made products, causing problems to those who are allergic, when they eat meat products, soups, glazes, ice cream, chocolates, and sweets. It’s also the key ingredient in many cakes, pastries or desserts.

People with allergies to eggs find that any exposure to egg may cause mild symptoms that include nettle rash (otherwise known as hives or urticaria) or a tingling or itchy feeling in the mouth. More serious symptoms are uncommon but remain a possibility for some people, including children. These may include swelling in the face, throat and/or mouth, difficulty breathing abdominal pain, nausea, and vomiting.

Madhuram, the author of the website, EgglessCooking.com explained, “The growing number of egg allergies we are seeing in the US and all over the world means we need to have a growing awareness of our food. However, there are clever ways to help you manage egg replacement and enjoy eating well. We’re delighted to share some that we think will surprise and amaze you.”

The company has produced a useful and well-designed online substitution chart offering solutions for baking recipes where you may usually use egg. For example, brownies or muffins can be made with mashed banana or avocado, while cupcakes can use yogurt. There are dozens of suggested replacements covering everything from pancakes to meatballs on the chart. It has already been shared almost 7,000 times.

Madhuram, added, “I really understand the challenges of people who need to manage restricted diets face, such as in getting a really good bake, and our new egg substitute chart should be a great help. Egg-free baking needn’t be hard.”
